| Recipes from the Farm Our Favorite Things Mama's Very, Very, Very Delicious Pecan Pie 1 Cup White Karo Syrup, 1/2 C Sugar, 1 Tbsp Flour, 1 Tsp Vanilla, 1/2 Stick Butter, 2 Beaten Eggs, 1 C Pecans Coarsely Chopped (Leave 12 whole for decoration) Cook mixture on medium low until thickened, stirring constantly. Put pecans in shell. (Save out about 12 whole pecans to decorate the top.) Pour mixture over pecans. Place the 12 in a pretty pattern on the top. Cook for 30 minutes at 350 degrees. Let cool before cutting. Delicious! Aunt Louise's Sweet Potato Souffle 3 Cups Cooked, Mashed Sweet Potatoes, 1 C Sugar, 2 Eggs, 1 Tsp Vanilla, 1/2 Cup Melted Butter Combine and beat well. Pour in buttered baking dish. Combine and sprinkle over top: 1 C Chopped Nuts, 1/3 C Flour, 1/2 C Melted Butter. Bake at 350 Degrees for 45 minutes. Cook for 30 minutes at 350 degrees. So good, it could be dessert! Quick and Easy Peppy Peppermint Bark Sparkle (Great on Valentine's Day and Christmas) 1/2 Cup crushed Candy Canes or Peppermints, 1 lb. White Chocolate (chips or blocks), 1/2 Tsp Mint Flavoring optional Place candy in plastic bag and hammer into 1/4" chunks. Melt the chocolate slowly on low heat. Combine candy canes with chocolate. Add flavoring if desired. Pour mixture, spread thin, onto a cookie sheet layered with waxed paper. Place in frig for 45 minutes. Remove from cookie sheet and break into pieces like peanut brittle. Yummy! Salad Quick (more filling than it sounds and great for a quick, light dinner or supper) 1 large Publix Salad Bag, 6 fried chicken strips cut into bite-sized pieces, 1/2 c cheese (bite sized) 1/3 c Ranch dressing Mix together. Serve with a side of rice or potatoes. Snappy flavor, very filling, and so easy! |
